We have been at Texture filming not only Aggi Sverrisson but also his sommelier Xavier Rousset matching wine to Aggi's dishes. The masterclass (Below) was of a Beetroot Salad with Goats Cheese Snow. Xavier matches this dish with a Sylvaner from the Sud Tyrol, Italy; delicious . . . The second was a masterclass of Aggi preparing Gravadlax and Xavier complimenting this with Tyrells Semillon from the Hunter Valley, Australia.
